Exhaust looks better than i expected it to! Definetly better than the other option.
For the electronics maybe a leather tool-bag thing would look nice

As far as the exhaust goes…it's all been done before, so don't worry about being different. I would build it to net the most profit in the end. Find one that looks awesome, and copy it. If you are selling it anyway, might as well market it to the masses. Not a very artistic approach, but it is what it is.
I went with a sprocket spring loaded tensioner from monstercraftsman.com. They offer a lot of options. All are quality
Why don't you just take a few links out of the chain? A decent rivit tool is less than $100

I like the first exhaust, if you think it is to hot at your leg maybe you can rab the exhaust with exhaust rab it looks cool and it is not to hot at your like. Love the channel by the way

The scrambler style pipes looks really good, but won't they be too loud to ride for more than a few minutes?

Maybe wrapping your exhaust with Titanium exhaust wraps will help keep the heat off your leg
For less than $30 you could have just welded up a better perfect dimensioned custom box

I'm building a cafe racer, same doner bike. Putting the munit in the headlight and new battery position is very clever. I have a trispark ignition. Where are you putting the reg-rec unit? It needs to be kept out and cool? This has to be the most helpful bike building series on YouTube. Thanks.
Looks great! Personally I would try and match that exhaust cut closer to the angle of the hardtail frame, or match the angle of the front of the frame. Visually it will look more cohesive.

On the exhausts…you may have tuning issues with short pipes and little to no back pressure.

#1 Looks best, I would have done the baloney cut 90 deg to what you did. make a heat shield or wrap the pipes too your leg will thank you….. 🙂

Have you thought about running the wires to the rear of the bike through a skinny piece of brass tubing that follows the lines of the frame? I think that would match the theme of the bike and be a simple way of hiding the wires.
The only issue you may have with the pipes is that you may get some carbon blowing onto the frame (which may not be an issue if you paint the frame black )and I see from other comments that you plan to wrap em which will be good for your leg Of they are way too loud you could make or buy some in tube baffles back in the day VW tailpipes were the go for that.
The main backbone tube on oil in frame triumphs is not very thick is jeep an eye on where the top part of your hard tail is welded on as they can crack/fail there so maybe you might want to consider some gussets on that joint to spread the load and reduce the stress riser effect on that crucial connection.
